Creamy Mexican White Rice

In this Creamy and delicious Mexican White Rice recipe we show you how we prepare our white rice. This recipe is very different to the traditional white rice, and in our opinion its much tastier and filling. We have often been asked how we make our rice and we wanted to share the recipe so you guys can make it from your homes as well.
This rice is a warm and delicious comfort food which will become a favorite in your homes!

In order for the rice not turning mushy it’s important not to stir it anymore when all ingredients are integrated and the rice is simmering. Through stirring while simmering, the rice will end up mushy and is not very nice to look up.

We prepare this recipe often as it’s a side-dish which goes very well with many meals. Mexican dishes are often accompanied by rice (white, red or green) or beans, so these are also the side-dishes which are loved and enjoy alot in our house.

The rice turns out very creamy and by adding a sliced onion, corn and a jalapeno pepper the rice becomes a slightly sweet flavour.

Creamy Mexican White Rice

Ingredients

  • 1 cup white rice parboiled
  • 2 cups water
  • 1 cup double cream
  • 4 tsp creme fraiche (sour cream)
  • 150 g corn
  • 2 tsp Knorr chicken stock
  • 2 tsp olive oil
  • 1 onion sliced
  • 1 jalapeño pepper
  • 1 garlic clove minced
  • 1 chunk of butter

Instructions

  • Sauté the onion and the garlic in the melted butter and olive oil in the sauté pan
  • add the rice and stir it around to cover it with the mix
  • add the water, the double cream, the creme fraiche, the corn, the jalapeño pepper and the Knorr chicken stock.
  • Stir to integrate all ingredients
  • simmer the rice for about 30min at a low temperature and keep the pan covered and don't stir the rice

Notes

To check if the rice is done, squish it between two fingers. If it’s soft the rice is cooked.
