Mosaic Jello

Mosaic Jello is one of the most common desserts that come to my mind when I think of children’s birthday parties. As a Mexican I grew up with really cool “Mexican” style birthday parties. The amount of food one can enjoy is endless, its like being at a buffet for snacks and desserts. Kids parties usually are organized in a practical way. When I say practical, I want you close your eyes and visualize a beautiful and colorful open air terraza (terrace). So many different themes can be enjoyed and used to decorate and that is precisely what will fill your eyes as you look around. There are banners, balloons, bouncy castles, piñatas (lots and lots of piñatas!!)
Your eyes are overwhelmed with so much color and movement. Kids running around wild, the parents sitting at tables talking, smiling and eating. Because Mexicans love food and parties!
You continue exploring and then you see the holy grail! All the food displayed on different tables. You have the snack tables, filled with chips, sausages and different fruit cups which are drizzled with lemon juice, valentina sauce or tajin. You see all the beautiful colors of the fruit diced and placed in cups to make the eating more practical.
Then you see the drinks table. This one is usually filled with a variety of aguas frescas (fresh fruit waters). The most common ones are lemon, jamaica and horchata and they are displayed in big transparent glass barrels just asking to be served and enjoyed.
And last but not least you spot the dessert table! Holy Moly!!! You see the beautiful birthday cake and you see that brilliant and delicious mosaic jello.
Cubes of rainbow-hued gelatin give this cool and refreshing dessert its mosaic-style appeal. It honestly is a beauty! And the best part is that it is very easy to make and inexpensive.

Ingredients
  

  • 3 packages of flavour jello (25g each) different colours
  • 6 tazas Agua caliente 2 cups per jello package
  • 6 tazas cold water 2 cups per jello package
  • 1 lata leche condensada
  • 1 lata leche evaporada
  • 1 taza leche
  • ½ cdita. esencia de vainilla
  • 21 g. unflavoured natural jello
  • ½ taza Agua caliente
  • ½ taza cold water

Instructions
 

  • For each flavoured jello follow the instructions on the package. For a 25g package bring 2 cups of water to boil, add the jello powder and stir so it does not stick to the pan. In 2 other pans do the same to the other flavoured jellos. Once the jellos are dissolved turn off the heat and add 2 cups of cold water to each jello.
  • Pour each flavoured jello into a rectangular mold/tupperware to a height of 1 or 2cm (depending on the size of squares you want in your jello) and let it cool in the fridge for a few hours until the jellos are solid.
  • To prepare the milk jello, in a bowl stir in the unflavoured jello in 1/2 cup of very cold water and let it hydrate and turn solid.
  • Add 1/2 cup of very hot water to the solid jello and gently stir the jello until it turns liquid.
  • To make the milk jello, in a pot add the condensed milk, evaporated milk, milk and vanilla extract. Add the melted natural jello to the pot and mix thoroughly at low heat. Once it's mixed well turn off the heat and let it cool down to room temperature.
  • Cut the flavoured jellos into equal squares. In a bowl mix all the squares so the colours are equally distributed.
  • Pour the flavoured jello squares into a jello mold and cover it with the milk jello. Put the jello mold into the fridge until the jello is hard.
