This chocolate and zucchini cake is simply amazing. Every time we make this cake and mention it is made with zucchini, we always get the same response ….”YUCK!!, NO WAY!!,”. Often followed by “Honestly, is it good?” No, it’s not just good, it’s amazing!!! This may be the best chocolate cake you have ever had. The zucchini in the cake makes it very moist, so when you bite into the cake you will feel a moist chocolate explosion in your mouth and you will be looking forward to baking this cake again and again!

This recipe is from the delish cookbook. It is not only very easy and fast to prepare but also a cake you will often make once you tried it the first time.

The flaky salt on top of the cake is a great combination with the chocolate taste of the cake. Salt intensifies the body’s ability to taste the sweetness in the sugar. A pinch of salt enhances tastes and makes flavors “pop”. Most sweet foods, desserts or baked goods have salt added for this purpose. Chocolate is no exception. With the addition of salt, a fuller chocolate flavor comes up and all flavors are faster brought to the surface to be enjoyed.

Chocolate zucchini cake

Chocolate-zuchini cake

This chocolate and zucchini cake is simply amazing. A moist chocolate explosion with every bite.

Ingredients
  

  • ½ cup melted butter
  • ½ cup unsweeted cocoa powder
  • cups all purpose flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • ¼ tsp salt
  • 1 cup sugar
  • 1 large egg
  • 1 large egg yolk
  • 1 tsp vanilla extract
  • 2 cups grated zucchini
  • cup semi-sweet chocolate chips
  • flaky sea salt
  • extra butter and cocoa powder

Instructions
 

  • Preheat the oven to 350°F/175°C
  • Sift the flour, the cocoa powder, the baking soda, the cinnamon and the salt into a bowl and mix well [Dry ingredients]
  • In another bowl whisk the sugar, the egg and the egg yolk until creamy [Liquid ingredients]
  • Add the melted butter and vanilla extract to the bowl with the liquid ingredients and mix in well. Mix the zucchini in well
  • Gradually add the dry ingredients to the liquid ingredients and mix in well.
  • Add the chocolate chips to the mix and stir in with a spoon or a fork
  • Butter a cake pan and add a tbsp of cocoa powder. Shake the cocoa powder around the cake pan until its fully covered
  • Pour the dough into the cake pan and bake it for 50min
  • After the cake is baked let it cool for 10min on the counter. Then take it out of the form and sprinkle flaky sea salt on the cake
